Food Thoughts for the Coming Week

I'm lovin' the meal plans.

Monday - I'm totally thinking outside of the box here. I want us to eat fish at least once a week. Last week we really enjoyed the tilapia, but wanted something different and inspired by a Greek thread on the WW recipe review board, I found this Greek Catfish. Since I had everything except the catfish, I thought I'd give it a try. I'm gonna make the following Greek Villager's Salad from the WW board to go with it (just as a salad,not as a pita filling):
Greek Villagers' Salad

Serving: 1/4 Salad with 1/2 pita

Ingredients:
3-ripe tomatoes, cut into 6 wedges
2-green bell peppers, seeded and cut into rings
1-cucumber, peeled and cut into 1/4 inch slices
4-pepperoncini(small peppers packed into vinegar)
1/2 cup sliced red onion
6 Kalamata olives, pitted and halved
2 tablespoons red wine vinegar
1 tablespoon extra virgin olive oil
1 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon pepper
2 oz reduced fat fetta cheese crumbles(about 1/2 cup)
2 pita breads, toasted and cut in half crosswise


Directions:
Combine tomatoes, bell peppers, cucumbers, pepperoncini, onion, olives, vinegar, oil, oregano, salt, and pepper in a large serving bowl; toss well. Sprinkle salad with feta. Serve with pita bread.

Tuesday: No point night! I have some frozen chili, that I made pre-WW and don't even really know what's in it, which makes it really tough to count the points on - so we will have that with some good ol' sweet-buttery cornbread.

Wednesday: Spaghetti (maybe). I didn't make sauce this weekend, KK said she couldn't find any in the freezer, but I'm pretty sure there must still be a bag in there.

Thursday: This is the start of mid-winter break and my chickies won't go back to school until Tuesday. KK will be gone overnight to a friend's birthday party, so I'm letting SS have a friend over. I thought Sloppy Joe's would be a good choice, as they are SS's favorite. I have made my own chili sauce. It is actually cooking up right now and smells divine! I thought maybe some sweet potato fries might be good with this, and I'm positive that my girls would gobble them up - I always have to remember that other kids aren't as adventerous as mine, so we will just have oven fries with good ol' russets!

Friday - I've been craving this simple little pork recipe I got off of the WW board many moons ago:

4 lean boneless pork chops
2 cans ranch-style beans (or sometimes called chili beans)
1 cup of BBQ sauce

Throw it all in the crock pot. Call it dinner! The trick is to use a BBQ sauce that you love. I'm really easily pleased and like Kraft Original (I know, so horrible!!!!). I bought a bunch on sale for $.88, so I'm not even going to try and be impressive and make my own! LOL

Sautrday: Since I am going to all the trouble of making my own chili sauce, I thought we needed a nice recipe to utilize it and thought chicken was sorely missing from my menu this week, the result is Chili Sauce Chicken. I'm not sure what a good side for this would be?? Open to ideas!

Sunday: Another friend over day (since there isn't school Monday 2/16) and there was a 2-day meat sale at our small local store and I scored a nice roast for a reasonable price. I'll be making my favorite Slow-Cooker Pot Roast. I use red wine instead of water and it makes my favorite gravy on the planet. Some of "My Famous Mashed Potatoes" (that is what SS calls them - really they are ordinary mashed potatoes, but she loves them!) and that'll round out our week.

Hey, where all the food pics I keep promisin' y'all!??!?! BWAHAHAHAAHAHHA

It all sounds great! I especially like the sound of the fish dish...however, I would probably use tilapia instead of catfish :)

NO!!!!!!!! LOL I'm not YET as organized as you, I forgot that we would be out on Wednesday night. We learned about eating at WW tonight!

Chicky, you are an inspiration. I'm not quite at the menu planning stage yet, but your planning skills are absolutely spot on. Thank you so much for sharing your plan with us and providing inspiration and motivation. Seeing you and following you will make it easier for me when I finally get the gumption to do the same!
